The dealchecker Cookie Policy
Any visitor to dealchecker HQ will be aware of dealchecker’s cake policy. It’s fairly simple: there must always be cake in the office. But this new EU cookie law threw us into a bit of a tizzy – We hadn’t had any office cookies for at least a month.
Well, we’re happy to announce we’ve resolved the issue with the help of of three amazing cookie recipes, inspired by some of our favourite destinations. If you’re also having a cookie crisis you could do worse than bake the following:
Em’s Sicilian Lemon Cookies (Italy)

| Ingredients: 550g plain flour + 1tsp baking powder 200g butter 300g sugar 1 egg Zest of one large lemon 4 tbsp lemon juice 1/2 tsp vanilla extract More sugar for decorating Makes 36 |
Method: 1. Pre heat your oven to 350°f/180°C/gas 4 and line baking trays with greaseproof paper 1. Whisk together your dry ingredients 2. In a separate bowl cream your butter and sugar (beat them together until the mixture is pale and fluffy) then add the egg, vanilla, lemon zest and juice 3. Add the dry ingredients and mix it all together 4. Roll the mixture into little balls and coat in sugar 5. Place the balls on the baking tray about 1 – 2 inches apart 6. Bake for 8 – 10 minutes until pale and golden 7. Allow to cool for at least 2 minutes on a wire tray before you attempt to eat |
Alice’s Crunchy Peanut Butter Cookies (USA)

| Ingredients: 90g crunchy peanut butter 100g soft butter 100g caster sugar 90g light brown sugar 2 beaten eggs 200g plain flour 1 large tsp baking powder Makes about 30 |
Method: 1. Pre heat your oven to 350°f/180°C/gas 4 and line baking trays with greaseproof paper 2. In a mixing bowl, mix together the peanut butter, butter, caster sugar and light brown sugar until completely combined 3. Add the beaten egg and mix for a few more minutes 4. Sift in the flour and baking powder 5. The resulting mixture is quite sticky so cover your fingers in flour as you divide the mixture into even-sized balls and place them onto a lined baking sheet. Space them well apart, and flatten gently with fingers. 6. Bake for 20-25 minutes until set. Then cool on a wire rack. |
Sam’s Super Smarties Cookies (UK)

| Ingredients: 200g caster sugar 100g light brown sugar 250g plain flour 1 teaspoon of bicarbonate of soda 150g Smarties 2 eggs 150g softened butter Makes about 25 |
Method: 1. Pre heat your oven to 350°f/180°C/gas 4 and line baking trays with greaseproof paper. You should know the drill by now. 2. Sieve the flour into a bowl then mix with all the dry ingredients including the Smarties 3. Add the butter – it’ll be easier to mix if you cut it into chunks 4. Add the eggs and mix 5. Keep mixing (note – you should be mixing this one by hand – an electric whisk will break the Smarties) 6. Scoop out a heaped teaspoon onto your baking tray. Keep them spaced well apart. 7. Cook in the oven for 10-12 minutes until they brown at the edges. Allow to cool first on the baking tray before you attempt to move them to a rack. |
